When people ask me which variety fits best to the Sopron climate (after the Kékfrankos), I tell them Cabernet Sauvignon and Cabernet Franc. Why? As I have grown up at my family ́s winery in Burgenland, where we only work on loamy soil, I know how Cabernet Sauvignon needs the stones. Our Cabernet Sauvignon is located on the vineyard „Spitze Steiner“, with a lot of gneiss, which works just perfect with this variety. The place is so dry and hot that it took us six years until we had the first harvest. And still the growing of this vineyard is so slow that we don‘t make any green pruning or leaf work. As a result, the yield is very low, but this is compensated by an extraordinary quality of grapes every year. With its strong tannins this wine stays unsulfered until being bottled.
